An easy appetizer that you can’t stop digging into.

I stumbled upon a recipe video showing a wheel of brie melting in a delicious sauce made with fresh cranberries, and I just had to try it! Even though I live in a farming community, I had difficulty finding fresh cranberries at the store. No worries, though! I wanted to use canned cranberries instead, so I could whip it up anytime I wanted.
My first attempt was an absolute failure. When you mixed the cheese and sauce, it looked most unappetizing! So, I continued adapting the recipe. I decided to cut the cheese into chunks so that it would mix into the sauce without fully combining. Looking at my photos afterwards, I wish I had let it cook a bit longer so that the brie could have melted more.
The sauce has a similar profile to my wine-glazed ham recipe, which I absolutely love!

The Ingredients
Brie
I cut up a 7 oz wheel of brie, but you could also use the snack sized brie bites.
Orange zest & Cinnamon
This brightens the sauce and gives it a cheery undertone.
Canned Cranberries
I use whole canned cranberry sauce. I want the little chunky bits.
Craisins
I add dried cranberries just before baking. They plump up as they absorb moisture, helping thicken the sauce.

Serve This With
- My crostini toasts
- Fig & olive crisps from Trader Joes
- Any good cracker or crusty bread.


Brie Bites in Cranberry Sauce
Equipment
- 1 2-quart baking dish
Ingredients
- 16 ounces brie
- 14 ounces whole berry cranberry sauce
- 2 teaspoons cinnamon
- zest from one orange
- 1/3 cup craisins
Instructions
- Preheat your oven to 350F.
- Cut the 16 ounces brie into bite-sized pieces.
- Pour the 14 ounces whole berry cranberry sauce into a 2-quart baking dish. Mix in the2 teaspoons cinnamon and zest from one orange. Layer the brie and 1/3 cup craisins on top.
- Bake for 25 minutes, or until the sauce is bubbly and the cheese is melting.
- Serve with pieces of french bread or crackers.
