Keto Fried Chicken Bites

The bites are perfectly salty, with a gingery taste, and a crispy coating. They remind me of the kind you can get at a Japanese restaurant.

Keto Fried Chicken Bites

These flavorful chicken bites are crispy and delicious.

Ingredients
  

  • 2 chicken thighs with skin
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon sake
  • 1 large egg
  • 2 tablespoons almond flour
  • 3 tablespoons coconut flour
  • oil for deep frying

Instructions
 

  • Remove the bones from the chicken if necessary, then cut into bite-size pieces. Leave the skin attached to the pieces.
  • Place the chicken pieces in a bowl then add the soy sauce, ginger paste, and sake. Mix well then allow to marinate for 1/2 an hour.
  • Drain the marinade off the chicken.
  • Preheat a large pan, or pot, with enough about an inch of cooking oil.
  • Beat the egg together well, then mix into the chicken. Add the almond and coconut flours, then mix into the chicken. It may seem a bit pasty, but it’s going to be ok.
  • Drop the pieces into the hot oil carefully. They will fry to a deep brown color within a few minutes. Once the chicken bites are done, remove them from the oil and drain on a paper towel.
  • Serve with lemon squeezed over the top. I think this goes great with my coleslaw recipe!

Notes

You can test the doneness of the chicken by removing a piece from the oil, then press your cooking utensil into it. It will be the same level of firmness as when you press your pinky finger into your thumb.
